When can I see alpenglow on UK mountains?

Look near sunrise or sunset when high peaks catch low-angle sunlight after the sun is hidden from lower ground. Snow can intensify the colour, and later purple twilight light may create a second glow; there is no fixed 10–20 minute window or requirement for high moisture.

What makes a Fata Morgana appear, like the Isle of Man looking like a floating tower?

It is a complex superior mirage formed when refractive index changes sharply through a temperature inversion, often above cold water. Light from distant objects curves downward towards the colder, denser air and can reach you along multiple paths, producing elevated, inverted or stretched images.

Why does alpenglow look pink instead of the usual orange sunset?

Near sunrise and sunset, sunlight takes a long path through the atmosphere. Air molecules and aerosols scatter shorter blue wavelengths more strongly, leaving the low-angle light richer in red, pink and orange; snow can make those colours especially vivid.
